Let’s Make Rejuvelac!

Summer is here and one of our favorite drinks we use to quench our thirst at CHI is Rejuvelac. We hope you enjoy it as much as we do!

Things You Will Need:

• A Grain Of Your Choice
• A Two-Quart Mason Jar Or Sprouting Jar
• A Filter Or Straining Cloth
• A Glass Container To Hold the Rejuvelac

Step 1
You will need a jar for to make your rejuvelac in. For your own personal use, a two-quart Mason Jar will enable you to make enough rejuvelac to enjoy several glasses for a few days. (Here at CHI, we make it by the gallon). You can order Mason Jars off the internet or you can buy a case of at your local department or grocery store.

Step 2
Pour in 1/4 cup of your favorite grain. You can make rejuvelac from any grains, including wheat, quinoa, barley, rye and raw unhulled buckwheat. For the best quality rejuvelac, Use only organically grown grains.
The key to great rejuvelac is to work in a clean environment and to sterilize your jars. Use only pure filtered water as tap water usually has far too many contaminates.

Step 3
Now rinse the grain and remove any floating seeds, as they are usually dead. Stir the grain around and remove any foreign matter that is floating, and then pour out the water several times until the water is clear.

Step 4
Add enough water to almost fill the two-quart jar. Let the grain soak for about twelve hours.

Step 5
Now you are ready to drain the water from the jar turn over and shake the jar, you should have as little water as possible remaining in your sprouting jar - SO THIS EVERY TIME YOU RINSE. You will rinse your grains at least once a day and on hot days, you may want to rinse them twice daily.

Step 6
Set the sprouting jar in a place where there is low light, or put a towel over the jar, so you can emulate the natural sprouting process. The temperature of the room should be between 68-80 degrees F.
Sprout the grains for 24-72 hours, until a tail forms at the end of the seed, Keep the sprouts moist, but not wet.

Step 7
Fill the two-quart container with water. Place a sprouting lid or a mesh screen on top of the two-quart container and let the rejuvelac ferment between for 24 to 72 hours at a room temperature of 68-80 degrees F, keeping the rejuvelac covered or in a low-lighted area. The longer you ferment the rejuvelac the stronger it gets. At CHI, we ferment between 48-72 hours, depending on the temperature.
The Rejuvelac should have pleasant fermented aroma and a slightly lemony taste. THEN IT IS READY!

Step 8
You can use many different methods to strain the Rejuvelac, At CHI we use a spouting bag or cheesecloth.
Some of our friends like to use mesh filters, like thoughts used in the making of coffee. Strain you Rejuvelac into a good container that has a lid and immediately refrigerate. Your Rejuvelac will last up to a week - unless you drink it all the first day...

Dr. Ann says, “Good Rejuvelac is a cloudy, slightly yellow liquid, with a tart, lemonade flavor. When it is fermented too long it can become very sour. Since it is constantly fermenting, it is natural that tiny bubbles rise through the liquid occasionally. The very best Rejuvelac is in fact slightly carbonated. It is also natural for a layer of white foam to form on top of the Rejuvelac. This is not harmful and can be skimmed off. Why should humans drink Rejuvelac?

It cleanses our digestive system, and increases our energy levels. Our digestive systems are the center of our entire bodies. Did Dr. Ann believe that Rejuvelac replaced water as part of the living foods program?
Yes, Dr. Ann felt Rejuvelac can replace water on the live foods program and should be drank throughout the day and in pace of free water.

Does science support the use of Rejuvelac?
Yes, Dr. Harvey Lisle, a scientist, chemist & nutritionist who performed tests on Rejuvelac, says: “Rejuvelac is rich in proteins, carbohydrates, dextrines, phosphates, saccharine’s, lactobacilli - acidophilus, saccharomyces and aspergillus. It has the means to break down large molecules of glucose, starch and glycogen.”

Does Rejuvelac have the vitamins, minerals, and nutrients we need?
Rejuvelac features high levels of Vitamins B in fact it carries 8 of the B vitamins along with vitamins E, K, C, and E, as well as the living enzymes which enable the nutrients to be assimilated.. One outstanding property of Vitamin E is its power to restore health and youth, as it decreases the need of oxygen thus increasing the energy level.
